Tired of those uninspiring standard soda pop flavors? You need to go out to the home garden for some inspiration. Herb infused soda pops are really simple to brew up at home and are yummy, gourmet alternatives to the conventional store bought types.
In this recipe, you will need a selection of fresh herbs (aprox 3/4 ounce). You can get these at any supermarket but it is especially satisfying to work with herbs picked direct from the garden. Need help, just use herbal tea as an inspiration. Any kind of ingredient which would make a good herbal tea would likewise produce a wonderful soda.

As well as the fresh herbs, you will also need to collect the following other ingredients. You will need approximately 1/2 cup sugar, 1 tsp fresh lemon juice, and seltzer water.
For your carbonated water, you can always use a bottle of commercially made sparkling water or club soda. But for the truly healthy taste and that happy "I did it myself" sense of achievement, I like using our family's seltzer water maker.
Now for this herbal infused carbonated water recipe, what you are effectively doing is creating your own flavor syrup. It's pretty straight forward.
Just mix together the sugar with 1 cup of water in a cook pot. Bring it to a simmer and gently stir the mixture just up until all of the sugar is dissolved. Once the sugar is completely dissolved, remove the pan from heat. You now can add the herbs. Just add anything you think sounds good. I like to add herbs with lemon or citrus elements. But aromatic herbs like lavender, mint, thyme, etc all work well.
Let the sugar syrup and herb mixture get friendly until it has cooled down completely. This will allow the herbal flavors an opportunity to fully infuse the sugar solution. At this point you should pour the mixture though a sieve in order to remove the herbs.
Congratulations . you are ready to enjoy your soda. Fill a glass with ice. Add in 2-4 tbsps of syrup. Finally, fill the glass with sparkling water. Stir and enjoy. That is all there is to it. Have fun!.
