Uric acid is produced through the breakdown of chemical compounds in our cells called purines. Crucially, these also exist in much of our food at varying concentrations.

Many foods have relatively low purine levels and can be eaten. These are foods like; essential fatty acids (e.g. nuts, flax seed, salmon, tuna), complex carbohydrates (cereals, rice, pastas, green leafy vegetables, cabbage, kale, parsley), and foods with high vitamin C (red cabbage, potatoes, red bell peppers, oranges, mandarins, tangerines). Also low fat dairy products and selected fruits like cherries, strawberries, and grapes.
